The production process of cooking oil includes three main processes: pretreatment of oil seeds, pressing of oil seeds and refining of crude oil.
1. Pretreatment of oil seeds:
The common oil seeds includes soybean, peanut, cottonseed, rapeseed, sesame seed, sunflower seed, and so on. The special oil seeds has palm fruit and palm kernel. The pretreatment of oil seeds consists of cleaning, shelling, drying, crushing, softening, rolling and steaming. The processed oil seeds will enter the next step to produce crude oil.

2. Pressing of oil seeds:
The oil obtained in the pressing process of oil seeds is crude oil, which is usually produced by two methods: pressing and extraction. The pressing method is to extract oil from the oil seeds by a physical pressing method. Though It is derived from the traditional oil making workshops, the pressing method is an industrialized operation now. Extraction is a method of using chemical principles (solvent) to extract oil from oil seeds. According to the development history of the world cooking oil processing technology, the extraction process is the most advanced technology internationally recognized. The extraction method was first applied and developed in the developed countries. In recent years, the oil extraction technology has been widely applied in the production process of cooking oil in China.

3. Refining of crude oil
No matter whether it is squeezed or extraction oil, it can not be eaten. It is called "crude oil". Crude oil contains various impurities, including those produced in raw materials. Some impurities are very harmful to human body, such as gossypol in cottonseed oil. Cooking oil refining plant can refine crude oil into refined oil. After further processing (i.e. refining), the crude oil can be removed and become edible oil. The process of cooking oil refining, generally including degumming, neutralization, decolorization, and deodorization, can make it conform to the national standard after this series of processes and become edible oil.
